Text Box: Festive Chicken Tea Sandwiches

16 thin slices whole wheat or pumpernickel bread
1/2 cup mayonnaise
1/3 cup fresh or frozen and thawed cranberries,
        chopped
2 tablespoons chopped pecans
1/4 teaspoon salt
1/8 teaspoon ground black pepper
16 thin slices of cooked chicken breast
8 lettuce leaves

Lightly butter bread slices with softened butter or margarine.

Combine mayonnaise, cranberries, pecans, salt and pepper; spread on all slices of buttered side of bread. Layer half the bread slices with chicken and lettuce. Top with remaining bread. Trim away crusts. Cut sandwiches into four triangles. Makes 32 sandwiches.
Text Box: Smoked Salmon & Egg Salad
Tea Sandwiches

6 slices of white bread
3 large hardboiled eggs, finely
      chopped
2 ounces sliced smoked salmon
      (2 slices), finely chopped
1-1/2 tablespoons chopped fresh
      chives
1 tablespoon mayonnaise
1 tablespoon sour cream
Salt and ground black pepper to taste

Lightly butter the bread slices with softened butter or margarine.

In a medium bowl, blend together remaining ingredients. Spread egg salad mixture on 3 of the buttered bread slices. Top with the remaining buttered bread slices. Trim away crusts and cut into 4 triangles. Cover and refrigerate until ready to serve. Makes 12 sandwiches.
