Text Box: Barbecue Chicken Muffins From
Your Favorite Meals in a Muffin

1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon brown sugar, packed
1/4 teaspoon garlic powder
1/2 cup chopped onion
1 large egg
1/4 cup barbecue sauce
3/4 cup milk
2 tablespoons melted butter or margarine
2 cups chopped, cooked chicken

Preheat oven to 375°. Lightly grease 12 standard size muffin cups.

In a small skillet, cook onion in a small amount of vegetable oil until tender. Let cool. In a large bowl, combine flour, baking powder, baking soda, salt, black pepper, brown sugar and garlic powder.

In a separate bowl, whisk together egg, barbecue sauce, milk and butter. Add to flour mixture and stir just until moistened. Stir in chicken. Fill muffin cups and bake for 20-25 minutes or until done.

Serve with sides of potato salad and baked beans for a hearty meal.

Your Favorite Meals in a Muffin

1 cup all-purpose flour
1/2 cup corn meal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon taco seasoning mix
1/4 cup chopped onion
3/4 pound lean ground beef (about 1-1/2 cups after cooking)
1 cup shredded Cheddar cheese
1 large egg
1 cup milk
2 tablespoons melted butter or margarine

In a skillet, cook ground beef with onion. Drain and let cool.

Preheat oven to 375°. Lightly grease 12 standard size muffin cups.

In a large bowl, combine flour, corn meal, baking powder, baking soda, salt and taco seasoning mix. In a separate bowl, whisk together egg, milk and butter. Add to flour mixture and stir just until moistened. Stir in cooked ground beef and onion mixture and cheese. Fill muffin cups and bake for 20-25 minutes or until done. Serve warm.

For a heartier meal, spit muffins in half horizontally. Top with grated Cheddar cheese and place under broiler for a few minutes until cheese is melted. Top with shredded lettuce and tomato and your favorite salsa.
